large can chick peas (garbanzo beans) or cooked dried chick peas

cups cooked quinoa (1½ cups dry)

stalks celery, sliced

small bunch cilantro, chopped (green coriander)

cloves garlic, minced

green onions, thinly sliced
Half
large cucumber, chopped

yellow or red bell pepper (or both)

Roma (or 2 regular) tomatoes, chopped

cup pomegranate seeds
Add
to taste: extra virgin olive oil, lemon
juice, apple cider vinegar, cumin, cayenne, salt, pepper
Cool
cooked quinoa, mix all ingredients together
Goat
feta on top with some pomegranate seeds and cilantro as garnish
