Chick Pea & Quinoa Salad

1 large can chick peas (garbanzo beans) or cooked dried chick peas
4½ cups cooked quinoa (1½ cups dry)
3 stalks celery, sliced
1 small bunch cilantro, chopped (green coriander)
4 cloves garlic, minced
4 green onions, thinly sliced
Half large cucumber, chopped
1 yellow or red bell pepper (or both)
4 Roma (or 2 regular) tomatoes, chopped
¼ cup pomegranate seeds
Add to taste:  extra virgin olive oil, lemon juice, apple cider vinegar, cumin, cayenne, salt, pepper

Cool cooked quinoa, mix all ingredients together

Goat feta on top with some pomegranate seeds and cilantro as garnish
