Breakfast Granola

3 cups rolled oats
1 cup chopped almonds
1 cup sunflower seeds
1 cup pumpkin seeds

¾ cups Safflower or soy oil
½ cup honey or maple syrup
1 tbsp cinnamon
1 tsp sea salt
1 tsp vanilla
1 to 2 cups chopped dried fruit (e.g. papaya, pineapple, cranberries)

Mix oats, nuts and seeds in a large bowl.  Set aside

Heat oil, honey or syrup, cinnamon, salt and vanilla in a saucepan over medium heat, stirring constantly, until ingredients are well-blended and very warm.  Pour mixture over the oats, nuts and seeds and stir.  Bake on a jelly roll or lasagna pan in a 325ºF oven for 30 minutes, stirring every 5-7 minutes.  Let cool in pan.  Toss with dried fruit and store in an airtight container.  Will keep for up to 1 month.

For breakfast:  Depending on appetite, place ½ to 1 cup of granola in a bowl.  To this add:
1 tbsp flax oil
1 tbsp ground Silybum seeds
1 tbsp organic oat bran
1 tsp Lecithin granules
Fresh berries, banana or other fruit on top

Eat with milk, soy or rice milk, or yogurt.
